Ingredients

  • Finely chopped Carrot: 1cup
  • Finely chopped potatoes: ½ cup
  • Finely chopped Onions: 2 tbsp
  • Finely chopped cabbage: 4 tbsp
  • Finely chopped tomatoes: 2 tbsp
  • Cauliflower finely chopped: 2 tbsp
  • Green Peas: 2 tbsp
  • Whole wheat Penne: ¼ cup
  • Tomato puree: 4 tbsp
  • Oats flour: 1 tsp
  • Oregano dried: 1 tsp
  • Salt and Pepper: to taste

Method

  1. Saute the onions on a medium flame.
  2. Since we are not using oil use a non-stick pan or spray the pan with cooking oil.
  3. You may sprinkle a little water if it starts sticking to the pan.
  4. Add the carrots, cauliflower, green peas and 4 cups of water and cook on a medium flame for 3 to 4 minutes.
  5. Add potatoes, cabbage, penne and cook well till the vegetables are done and pasta is cooked.
  6. Add the oats flour and mix well so lumps form.
  7. Add the tomatoes, tomato puree, oregano, salt and pepper to taste.
  8. Mix well and cook for 2 minutes on a medium flame.
  9. Full on veggies and fibre and super taste makes it the most wanted soup.
